Weeknight dinner
Chicken Smash Tacos
Ground chicken pressed crispy against the skillet and served in warm tortillas with bright, crunchy toppings—this is the weeknight dinner that tastes fancy but comes together in under 30 minutes.
Ingredients:
- 1 lb ground chicken
- 8 small tortillas (corn or flour)
- 2 tbsp oil
- Salt and pepper to taste
- 1 tsp cumin
- 1/2 tsp garlic powder
- 2 cups shredded green cabbage
- 1 lime, halved
- 1/2 cup sour cream
- 2 jalapeños, minced
- Fresh cilantro
- Salsa or hot sauce
Method:
- Make the jalapeño crema by mixing sour cream, minced jalapeños, cilantro, and a squeeze of lime. Season to taste.
- Toss cabbage with lime juice and a pinch of salt; set aside.
- Heat oil in a large skillet over medium-high heat. Divide chicken into 8 portions and place on tortillas in the pan, pressing each firmly with a spatula for 3–4 minutes until golden and crispy.
- Flip each tortilla-chicken combo and cook another 2–3 minutes until cooked through.
- Transfer to a plate and top with lime cabbage slaw, jalapeño crema, and salsa.
Chef's tip: Don't skip the pressing—that direct contact between chicken and hot skillet creates an irresistible crispy crust that elevates the whole taco.
