Easy Jalapeño Corn Fritters
Golden, crispy-outside corn fritters with a tender heart and a gentle kick—these are the kind of snack that disappears in minutes, whether you're serving them as an appetizer, side dish, or late-night craving fix.
Ingredients:
- 1½ cups fresh or frozen corn
- ¾ cup all-purpose flour
- ¼ cup cornmeal
- 2 jalapeños, finely diced
- ¼ cup diced red bell pepper
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mixed and rested 5 minutes)
- ¼ cup plant-based milk
- Oil for frying
Method:
- Mix flour, cornmeal, cumin, salt, and pepper in a bowl.
- Fold in corn, jalapeños, and bell pepper.
- Whisk flax egg with plant-based milk, then stir into the dry mixture until just combined.
- Heat ½ inch oil in a skillet over medium-high heat.
- Drop spoonfuls of batter into hot oil and flatten slightly with the back of your spoon.
- Fry 2–3 minutes per side until golden and crispy.
- Transfer to a paper towel-lined plate.
