Easy Jalapeño Corn Fritters
These crispy-outside, tender-inside fritters are pure breakfast joy—golden, lightly spiced, and the kind of thing that makes your morning feel special without demanding hours in the kitchen.
Ingredients:
- 1 cup fresh or frozen corn
- ¾ cup all-purpose flour
- ¼ cup cornmeal
- 1 jalapeño, diced
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- ½ cup plant-based milk mixed with 1 tablespoon cornstarch
- Oil for frying
Method:
- Mix flour, cornmeal, cumin, chili powder, salt, and pepper in a bowl.
- Stir in corn, jalapeño, and cilantro.
- Pour in the milk mixture and stir until just combined—lumps are fine.
- Heat ½ inch oil in a skillet over medium-high heat.
- Drop spoonfuls of batter into hot oil, flattening slightly with the back of your spoon.
- Fry 2–3 minutes per side until golden brown.
- Drain on paper towels and serve warm with lime crema or your favourite salsa.
