Easy Jalapeño Corn Fritters

Crispy golden fritters bursting with sweet corn and a jalapeño kick—these are the snack that proves you don't need dairy or eggs to make something absolutely crave-worthy and utterly addictive.

Ingredients:

  • 2 cups fresh or frozen corn
  • 1 cup all-purpose flour
  • ½ cup unsweetened plant-based milk
  • 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flax egg)
  • 2 jalapeños, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • Oil for frying

Method:

  1. Prepare your flax egg by whisking ground flaxseed with water; let sit 5 minutes.
  2. In a bowl, combine flour, cumin, salt, and cilantro.
  3. Stir in the flax egg and plant milk until just combined (a few lumps are fine).
  4. Fold in corn and jalapeños gently.
  5. Heat ½ inch oil in a skillet over medium-high heat until shimmering.
  6. Drop spoonfuls of batter into hot oil and fry 2–3 minutes per side until golden brown.
  7. Drain on paper towels and serve warm with lime wedges or your favourite salsa.
