Middle Eastern Pistachio & Rosewater Baklava
This is the dessert that stops conversations—crispy phyllo layers studded with pistachios, bound together with fragrant rosewater and honey syrup, then baked until golden and absolutely irresistible.
Ingredients:
- 1 lb shelled pistachios, finely chopped
- ½ cup granulated sugar
- 2 tsp rosewater
- 1 tsp ground cardamom
- 1 box phyllo dough, thawed
- 1 cup melted butter
- 1 cup honey
- ½ cup water
- 1 tbsp lemon juice
- 3 whole cloves
Method:
- Mix pistachios, sugar, rosewater, and cardamom in a bowl.
- Brush a 9x13" baking pan with melted butter. Layer 6 phyllo sheets, brushing each with butter.
- Spread half the pistachio mixture over phyllo. Layer 4 more buttered sheets, then the remaining pistachios. Top with 6 final phyllo sheets, buttering each one.
- Brush the top generously with butter. Cut into diamond or square shapes (cut all the way through to the base).
- Bake at 350°F for 40–50 minutes until deep golden brown.
- While baking, combine honey, water, lemon juice, and cloves in a saucepan. Simmer 10 minutes, then cool completely.
- Pour the cooled syrup evenly over hot baklava straight from the oven. Let it absorb for at least 2 hours before serving.
Chef's tip: Make this days ahead—baklava actually tastes better after a day or two as the flavors meld and the phyllo softens beautifully. Store covered at room temperature.
