Salted Butterscotch Blondies

These chewy, buttery bars deliver that perfect balance of sweet butterscotch and a whisper of salt—a texture and flavor pairing that Middle Eastern baking traditions have celebrated for centuries. With just one bowl and eight ingredients, you'll have a showstopper dessert that feels effortless to make.

Ingredients:

  • 170g unsalted butter, melted
  • 200g packed brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 190g all-purpose flour
  • 1 tsp baking powder
  • 180g butterscotch morsels
  • 1 tsp fleur de sel or coarse sea salt

Method:

  1. Preheat oven to 175°C and line a 20cm square baking tin with parchment paper.
  2. Whisk melted butter and brown sugar together until combined, then stir in the egg and vanilla.
  3. Fold in flour and baking powder until just combined—don't overmix.
  4. Fold in butterscotch morsels gently.
  5. Spread batter into the prepared tin and sprinkle salt evenly over the top.
  6. Bake for 25–30 minutes until golden and a toothpick emerges with moist crumbs.
  7. Cool completely before cutting into 16 squares.

Chef's tip: Don't skip the salt sprinkle on top—it amplifies the butterscotch's depth and prevents the sweetness from feeling one-note, just like how Middle Eastern confections layer flavors for maximum impact.
