Homemade Graham Crackers

These crisp, buttery crackers with warm honey and cinnamon flavour are a revelation—so much better than the box, and they fill your kitchen with the most wonderful smell as they bake. Perfect on their own, tucked into s'mores, or crushed into pie crusts, they're the kind of project that feels fancy but comes together surprisingly fast.

Ingredients:

  • 1¾ cups whole wheat flour
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ⅓ cup honey
  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 2–3 tablespoons water (if needed)

Method:

  1. Cream butter, honey, and brown sugar until light and fluffy, about 2 minutes.
  2. Stir in vanilla, then fold in both flours, cinnamon, baking soda, and salt until just combined.
  3. Add water if the dough feels too dry. Divide dough in half, wrap, and chill for 30 minutes.
  4. Preheat oven to 350°F (175°C). Roll one dough half between parchment sheets to ¼-inch thickness.
  5. Cut into rectangles, place on baking sheets, and prick with a fork.
  6. Bake 12–15 minutes until golden and crispy. Cool on the sheet, then transfer to a wire rack.

Chef's tip: Pricking the dough with a fork isn't just traditional—it prevents annoying puffing and gives you crackers with that signature crispy bite.
