Easy Fattoush Salad

Fattoush is the Middle Eastern answer to breakfast boredom—a vibrant, crunchy salad that feels more like a celebration than a meal, combining fresh vegetables with crispy pita and a bright pomegranate dressing.

Ingredients:

  • 2 cups mixed greens (romaine, arugula, or lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/2 cup pomegranate arils
  • 1 pita bread, cut into chips and toasted until crispy
  • 1/4 cup pomegranate molasses
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method:

  1. Toast your pita chips in a 375°F oven for 5-7 minutes until golden and crispy.
  2. Whisk together pomegranate molasses, olive oil, lemon juice, salt, and pepper in a small bowl.
  3. Combine all fresh vegetables and mint in a large bowl.
  4. Pour dressing over the salad and toss gently to coat.
  5. Top with pomegranate arils and crispy pita chips just before serving.

Chef's tip: Add the pita chips at the very last moment—soggy chips ruin the magic, so save them for just before you eat.
