Slow Cooker Chicken Tacos

These five-ingredient dump-and-go tacos are the weeknight dinner hero you didn't know you needed—minimal prep, maximum flavor, and a kitchen that smells incredible when you get home.

Ingredients:

  • 2 lb boneless, skinless chicken breasts
  • 1 cup salsa (fresh or jarred)
  • 1 packet taco seasoning (or 2 tablespoons homemade blend)
  • 8-12 small tortillas
  • Toppings: shredded cheese, lettuce, sour cream, cilantro, lime

Method:

  1. Add chicken breasts to your slow cooker with salsa and taco seasoning. Stir gently to coat.
  2. Cook on low for 6-8 hours (or high for 3-4 hours) until chicken shreds easily with a fork.
  3. Shred the chicken directly in the slow cooker and let it soak in the sauce for a few minutes.
  4. Warm tortillas and fill generously with chicken mixture.
  5. Top with cheese, lettuce, sour cream, cilantro, and a squeeze of lime.

Chef's tip: Brown your chicken quickly in a hot pan before slow cooking—it adds a layer of caramelized depth that transforms these tacos from weeknight filler to genuinely crave-worthy.
