Easy Fattoush Salad

This vibrant one-bowl fattoush is the perfect weeknight dinner—fresh, crunchy, and ready in 20 minutes, with bright pomegranate dressing and crispy pita chips that make it feel special without the fuss.

Ingredients:

  • 2 cups mixed greens (romaine, arugula, or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup pomegranate arils
  • ¼ cup fresh mint leaves, roughly chopped
  • 2 pita breads, cut into strips and toasted until crispy
  • 3 tablespoons pomegranate molasses
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Method:

  1. Toast pita strips in a 375°F oven for 5–7 minutes until golden and crispy, then set aside.
  2. Whisk together pomegranate molasses, olive oil, lemon juice, garlic, salt, and pepper in a small bowl.
  3. Toss greens, tomatoes, cucumber, and red onion in a large bowl.
  4. Pour dressing over vegetables and toss gently.
  5. Top with pomegranate arils, fresh mint, and crispy pita chips just before serving.
