Easy Fattoush Salad
This vibrant one-bowl fattoush is the perfect weeknight dinner—fresh, crunchy, and ready in 20 minutes, with bright pomegranate dressing and crispy pita chips that make it feel special without the fuss.
Ingredients:
- 2 cups mixed greens (romaine, arugula, or your choice)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup pomegranate arils
- ¼ cup fresh mint leaves, roughly chopped
- 2 pita breads, cut into strips and toasted until crispy
- 3 tablespoons pomegranate molasses
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Method:
- Toast pita strips in a 375°F oven for 5–7 minutes until golden and crispy, then set aside.
- Whisk together pomegranate molasses, olive oil, lemon juice, garlic, salt, and pepper in a small bowl.
- Toss greens, tomatoes, cucumber, and red onion in a large bowl.
- Pour dressing over vegetables and toss gently.
- Top with pomegranate arils, fresh mint, and crispy pita chips just before serving.
