Easy Jalapeño Corn Fritters

Golden, crispy-edged corn fritters loaded with jalapeño heat—these are the kind of snack that disappears in minutes, whether you're serving them at a party or sneaking them straight from the pan.

Ingredients:

  • 1 cup fresh or frozen corn
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened plant-based milk
  • 2 jalapeños, minced
  • 1/4 cup diced red bell pepper
  • 2 teaspoons baking powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • Oil for frying

Method:

  1. Combine flour, baking powder, cumin, salt, and cayenne in a bowl.
  2. Whisk in the plant-based milk until just combined—lumps are fine.
  3. Fold in corn, jalapeños, and bell pepper.
  4. Heat 1/2 inch of oil in a skillet over medium-high heat until shimmering.
  5. Drop spoonfuls of batter into the oil and fry 2–3 minutes per side until golden and crispy.
  6. Drain on paper towels and serve warm.
