No-Bean Crockpot Turkey Chili

This is the weeknight dinner that practically makes itself—lean ground turkey simmered with corn, peppers, and tomatoes into a deeply satisfying chili that tastes like you've been tending a pot all day, except you haven't.

Ingredients:

  • 2 lbs ground turkey
  • 1 large onion, diced
  • 2 bell peppers, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup frozen corn
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth

Method:

  1. Brown the ground turkey in a skillet over medium-high heat, breaking it apart as it cooks. Drain excess fat and transfer to your crockpot.
  2. Add onion, bell peppers, diced tomatoes, tomato sauce, corn, and broth to the crockpot.
  3. Stir in chili powder, cumin, garlic powder, salt, and pepper.
  4. Cook on low for 6–8 hours or on high for 3–4 hours.
  5. Taste and adjust seasonings. Serve with tortilla chips, sour cream, or shredded cheese.
