Easy Jalapeño Corn Fritters
Crispy golden fritters packed with sweet corn and a spicy kick—these are the kind of snack that disappears in minutes because everyone wants just one more.
Ingredients:
- 1 cup fresh or frozen corn
- 1 cup all-purpose flour
- 2 jalapeños, minced
- 1/2 cup unsweetened plant milk
- 2 tablespoons cornstarch
- 1 tablespoon olive oil (plus more for frying)
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Method:
- Mix flour, cornstarch, baking powder, garlic powder, salt and pepper in a bowl.
- Whisk together plant milk and 1 tablespoon olive oil in another bowl.
- Fold wet ingredients into dry, then fold in corn and jalapeños until just combined.
- Heat 1/4 inch oil in a skillet over medium-high heat until shimmering.
- Drop spoonfuls of batter into the hot oil and flatten slightly with the back of a spoon.
- Fry 2–3 minutes per side until golden brown and crispy.
- Transfer to paper towels and season with fleur de sel while still warm.
