Slow Cooker Chicken Tacos

These dump-and-go tacos are the ultimate weeknight lifesaver—minimum effort, maximum flavor, and your kitchen smells incredible by dinnertime.

Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup salsa (mild or spicy, your call)
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 cup corn (fresh or frozen)
  • Corn or flour tortillas for serving
  • Toppings: shredded cheese, sour cream, cilantro, lime wedges

Method:

  1. Place chicken breasts in your slow cooker.
  2. Pour salsa over the chicken and sprinkle taco seasoning evenly.
  3. Add black beans and corn, stirring gently to combine.
  4. Cover and cook on low for 6–8 hours (or high for 3–4 hours).
  5. Shred the chicken with two forks right in the slow cooker and stir everything together.
  6. Warm tortillas and fill with the chicken mixture, then pile on your favorite toppings.
