Cilantro Lime Sauce

While this isn't a traditional breakfast dish, this vibrant cilantro lime sauce transforms simple breakfast tacos, scrambled eggs, or chilaquiles into something restaurant-worthy—and it takes just minutes to make.

Ingredients:

  • 1 cup fresh cilantro, roughly chopped
  • ½ cup sour cream or Greek yogurt
  • ¼ cup mayonnaise
  • Juice of 1 lime
  • 1 jalapeño, seeded and minced
  • 1 clove garlic, minced
  • ½ teaspoon cumin
  • Salt and pepper to taste

Method:

  1. Add cilantro, sour cream, mayo, lime juice, jalapeño, and garlic to a blender or food processor.
  2. Pulse until smooth and creamy, about 30 seconds.
  3. Stir in cumin, then taste and adjust salt and pepper.
  4. Thin with a splash of water if you prefer a drizzle consistency.
  5. Refrigerate until ready to serve.

Chef's tip: Make this the night before—it actually tastes *better* the next morning once the flavors meld together, and it keeps refrigerated for up to five days, making it perfect for a week of exciting breakfasts.
