Easy Jalapeño Corn Fritters (Vegan)

Crispy golden fritters studded with sweet corn and fiery jalapeños—these are the kind of snack that disappears faster than you can make them, and they're naturally vegan too.

Ingredients:

  • 1 cup fresh or frozen corn
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened plant-based milk
  • 2 jalapeños, finely minced (seeds removed for less heat, kept for more)
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon baking powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Oil for frying

Method:

  1. Mix flour, baking powder, cumin, salt and pepper in a bowl.
  2. Whisk plant-based milk into the flour mixture until you have a thick, pancake-like batter.
  3. Fold in corn, jalapeños, and cilantro until evenly distributed.
  4. Heat oil in a skillet over medium-high heat.
  5. Drop spoonfuls of batter into hot oil, flattening gently. Fry 2–3 minutes per side until golden and crispy.
  6. Drain on paper towels and serve warm with lime wedges or your favorite sauce.
